Eggless Fried Rice
There is plenty of cooking to do with leftovers. I know, I know, many or you “don’t do leftovers.” But given the cost of groceries in today’s economy, you would be missing out on cost-savings if you didn’t make use of leftovers.
Let us consider rice for instance. We always cook too much of it, so there’s always leftovers. What to do with leftover rice? Well, I’ll share a very simple recipe with you. All we’re doing here is using rice you’ve already cooked and combining it with whatever is in your fridge and/or garden. In this case, I used swiss chard, thyme, green onions, and bell peppers harvested from my balcony garden. Check out the ingredients below.
Ingredients:
- 2 cup cooked rice
- 2 diced green onions
- 1 bunch chopped swiss chard (use more or less, it’s your preference)
- 1 tsp chopped fresh thyme
- 1 orange bell pepper (sliced long)
- ½ cup frozen peas (defrosted)
- ½ cup frozen corn (defrosted)
- 1 tsp fresh garlic (diced)
- 1 tsp ground cumin
- Whatever other leftovers in your fridge that you want to use (tomatoes, onions, chicken, grilled vegetables, etc.)
- 2 tbsp. Ann-Marie's Jamaican Jerk Sauce (less if you don’t want it spicy)
- 2 tbsp. Grapeseed or olive oil
- 2 tbsp. soya sauce
- 1 tsp sesame oil
- Salt (to your taste)
- Fresh cracked black pepper (to your taste)
Directions:
- In large frying pan or wok, add grapeseed OR olive oil over medium heat.
- Add garlic then onions, if you’re using them, and sauté until translucent.
- Then add swiss chard, bell peppers and sauté for a few minutes.
- Add any other leftover vegetables and/or chicken from your fridge and sauté for a few minutes.
- Add cumin, soya sauce, jerk sauce and mix in until fully incorporated.
- Clean a space in centre of the pan and add sesame oil. Let it heat up for a few seconds then add rice and thyme to centre of the pan. Stir until rice starts to fry.
- Then add, green onions, peas, corn and stir everything together, sauté for a few minutes.
- Remove from stove and taste. If needed, add salt and fresh black pepper.
Serve hot with your favourite lemonade or wine.
